Who We Are

Foxtail is a counter service brunch restaurant that focuses on small-batch, from scratch daily plates, pastries and desserts. While hours are subject to change given the state of the world, we are currently open 8am-1pm Tuesday-Sunday.

The Details

We offer a daily selection of Cheesecakes, French Macarons, Tarts, Custards, Cookies, Pop Tarts and small selection of gluten-free options. Because we only make a certain amount each day, please plan ahead and visit early to make sure you snag the treat you crave.

While we would love to accommodate groups of all sizes during business hours, we are unable to take reservations at this time as we have limited seating.

Our Philosophy

We always support our local community of organic farmers whenever possible because we believe it leads to more delicious food, is more equitable for the environment and in the end, is the right way to do business.

We value quality and beauty, both of which shine through in the products we make and the space we make them in.

We believe in supporting the creative community by hiring local Bend artists and showcase their work in a variety of ways in the bakery: from murals to merch, artists are given a space to show and sell their work at Foxtail.

The Food

We use only the highest quality ingredients in everything we make. Our cakes are made from scratch using freshly milled flour, buttermilk and farm fresh eggs.

The cornerstone of our food is our Italian style butter cream. It’s made with farm fresh egg whites, local or organic sweet cream, Tahitian vanilla beans and homemade fruit jams and compotes.

We use 79% coverture for our ganache, chocolate finishes, mousses and cocoa powder.

Our desserts contain no preservatives or artificial flavorings.

We make all of our fondant, marzipan and gum paste in house. We do not carry marshmallow fondant due to the uncertainty around the full range of ingredients in name brand marshmallows (no corn syrup, artificial flavors, etc.).

Our Team


Nickol Hayden-Cady


Nickol Hayden-Cady has been working in the culinary industry for over twenty years. She has earned her Associates Pastry Arts Degree from the Culinary Institute of America in Hyde Park, NY. Nickol has worked under top certified chefs and pastry chefs in California, Seattle, New York, London and Oregon.


Laura Hayden


Laura Hayden is the smiling face that will greet you as you walk in and experience Foxtail Bakeshop & Kitchen. She is the one who gets it all done to ensure your visit was memorable. Ben Blauvelt


Ben Blauvelt has been working in the service industry in Bend since he was 16 years old.  Ben has been involved with Foxtail Bakeshop & Kitchen since 2014, and since the summer 2019, has served as the Manager. "It is clear that Nickol and Laura have poured their hearts and souls into creating a magical place where every day feels like a new adventure filled with sweet surprises."
