I offer pastry and restaurant consultancy in the USA. I assist with menu planning, menu restructuring, patisserie technique and training, and new product development. I specialize in plated desserts, baked goods, French pastry, cakes, and other modern desserts.

I am a Oregon-based pastry chef and cookbook author, educated at The Culinary Institute of America, Hyde Park, NY. I have had the honor to setup new restaurants and bakeries from scratch, including my own bakeshop/restaurant Foxtail Bakeshop & Kitchen. With over 25 years in the culinary industry I am well versed in food and in kitchen culture.

I can help you to create a completely new dessert menu, improve an existing menu or continually upgrade seasonal desserts when needed throughout the year and train pastry staff on the changes and updates to production and service.

You may be happy with your Pastry staff but things can be inconsistent, unorganized, costly or just not exactly what your looking for. I can reorganize the kitchen and production to increase efficiency and decrease payroll or make improvements to dessert items that aren't quite what you want.

If you would like to increase the abilities and knowledge of your pastry staff I can help with that. Maybe its a technique to be learned, an introduction to ingredients that may inspire your staff or helping your pastry chef with the layout and look of their desserts. I can help your desserts compliment the rest of your food offerings. Together, we can create an exciting menu tailored to your patreons that fits into the constraints of your kitchen and the vision you have dreamed of.

If you are looking to develop a line of cakes, pastries, or other desserts for scaled production with extended shelf-life while retaining quality and integrity of the ingredients, I am excited to help you with that.

Investment: $100 an hour and I require a 30 hour consulting minimum to start.

Recipe development: $200-400 per custom recipe developed.
